Olivier Deboise Mendez has held the respected role of Chef de Cuisine at J&G Grill Mexico City since August 2015. Since his appointment, Chef Olivier has brought a unique passion of incorporating his own personal style into every culinary creation using the best products available in Mexico City.
Chef Olivier studied at LTPP Les Sorbets in Noirmoutier en île, France.
His career began at a young age in 2001, undertaking an adventure within the most prestigious kitchens in France, such as L’Étrier at the Royal Barriere hotel in Deauville alongside Chef Eric Provost and Le Candille at the Le Mas Candille hotel in Mougins with Chef Serge Gouloumès, both Michelin-starred restaurants.
After nine years in Europe, he returned to Mexico to work with Jerry Cendejas and Jorge Martinez at Anita Li, a top restaurant in Guadalajara’s new culinary world. Prior to arriving in Mexico City, Chef Olivier was part of the esteemed team at Relais & Châteaux’s property Imanta Resort in Punta Mita.
At the 2015 Latin America’s 50 Best Restaurants, sponsored by S. Pellegrino and Acqua Panna, and hosted by The St. Regis Mexico City, Chef Olivier showcased his unique Franco-Mexican spirit in his gastronomic creations, which was served to the 50 best awarded chefs of 2015, The Academy and other notable guests. Chef Olivier also had the honor of participating in the 2014 Millesime México as one of four young masters and the 2015 Millesime México 2015 – V Edition, “The Circus” as a top chef.
